Celiac disease is an auto-immune disorder. The condition is that gluten triggers the activity of your immune system that damages the function of the small intestine. That does not sound fun! This causes the absorption of nutrients from the food you intake to weaken. There are other symptoms and signs from the celiac disease and gluten sensitivities such as abdominal pain, bloating, diarrhea, constipation, foggy brain, rash or headache.  These systems can be recognized even though there is no damage to the tissues of the small intestine. Pretty scary stuff!

People want to become Gluten free because of the allergy reactions. Like other food allergies, that are caused by the immune system treating gluten (or other proteins) in wheat as a virus or bacteria, a disease-causing agent.  The immune system creates an antibody to the protein and that may result in congestion, breathing difficulties, bloating and other symptoms.

Gluten free diet can also be a healthy diet with the food options such as fruits and vegetables, beans, seeds, nuts, eggs, meats, fish and poultry.  For Gluten free diet, grains, starches or flours must be excluded.  On the other hand, Amaranth, Buckwheat, arrowroot, corn, cornmeal, Flax, Hominy, Millet, Quinoa, Rice, Sorghum, soy, Tapioca are all Gluten Free. Whether it is made from naturally gluten-free ingredients such as grapes, apples or juniper berries, or grains that contain gluten, the ingredients label should be double checked!

This is one big reason why a lot of consumes who use Healthy Noodle as their alternative noodle stay gluten free!  Healthy Noodle is easy to chew and very similar to a regular noodle texture, whereas other alternative noodles, such as Shirataki Noodles (Konjac Noodles) are very smelly and chewy (rubber band like texture!).  In order to get rid of the unpleasant smell, you need to boil the noodle for a few minutes, but by boiling the noodles it does not change the chewy texture.  Therefore, Shirataki Noodles and Konjac Noodles are not versatile, but Healthy Noodle is!  Healthy Noodle works for any dish, which is super helpful and there is no chance that you would get tired of having variety of Gluten free meals with Healthy Noodle!
