Veggie Noodle Soup

Ingredients

  • Healthy Noodle - 1 pouch
  • Olive oil - 1 TBS
  • Chopped garlic - 1 TBS
  • Onion - 1/2
  • Tomato - 1/2
  • Green beans - 1 cup
  • Chicken stock - 2 – 2 1/2 cups
  • Italian seasoning - 1/2 tsp
  • Salt & pepper to taste
  • Egg - 1
  • Fresh cilantro for garnish

Directions

  1. Rinse and drain Healthy Noodle and set aside.
  2. Slice the onion and tomato thinly.
  3. Put olive oil into a saucepan over medium high heat.  Add chopped garlic, onion, tomato, and green beans.  Stir well and cook for a couple minutes.
  4. Add chicken stock into the pan and sprinkle Italian seasoning and bring to a boil.  Cook until the onion and green beans are cooked thoroughly.
  5. Add Salt and pepper to taste.
  6. Beat the egg, then slowly pour the egg into the soup.
  7. Turn off the heat and cover with a lid until the egg is cooked.
  8. Put Healthy Noodle in a bowl and pour the soup over it.
  9. Garnish fresh cilantro and enjoy!
