Korean Spicy Noodle Soup

Ingredients

  • Healthy Noodle - 2 pouches
  • Cabbage - 1 cup (chopped)
  • Soy sauce - 2 TBS
  • Garlic - 1 tsp (chopped)
  • Sesame oil - 1 tsp
  • Chili pepper flakes - 1/4 tsp or more if you like spicier
  • Soup stock - 4 cups
  • Gochujang (Korean chili paste) - 2 TBS
  • Green onion for garnish (chopped)
  • Boiled or porched egg - 1 - 2

Directions

  1. Rinse and drain Healthy Noodle and set aside.
  2. In a soup pot over medium heat, stir fry cabbage with sesame oil, garlic, and chili pepper flakes for 2 minutes. 
  3. Add soy sauce and cook until the cabbage begins to look transparent.
  4. Add soup stock and bring to a boil.
  5. Reduce to a simmer and stir in Gochujang.
  6. Add green onion and continue cooking for another minute.
  7. Place Healthy Noodle in a bowl.
  8. Pour the soup over it, and place cabbage and green onion on top.
  9. Add egg and enjoy!
