Caprese Noodle Salad

Ingredients

  • Healthy Noodle - 1 pouch
  • Olive oil  - 1 TBS
  • Balsamic vinegar - 1 TBS – 1 1/2 TBS
  • Graded garlic - 1 tsp
  • Salt and pepper
  • Fresh mozzarella cheese   
  • Cherry tomatoes - 10  - 15 pieces
  • Fresh basil leaves-  6  - 8 pieces

Directions

  1. Mix olive oil, balsamic vinegar, garlic, salt and pepper together and set aside.
  2. Slice Mozzarella cheese.
  3. Cut cherry tomatoes in half.
  4. Cut fresh basil leaves in small pieces.
  5. Rinse and drain Healthy Noodle.
  6. Toss mozzarella cheese, tomatoes, and basil leaves together in a bowl with Healthy Noodle.
  7. Plate the noodle salad and drizzle the balsamic vinegar dressing over it and enjoy!
